All We Need Farm is a small, female-owned dairy farm run by Stacey Roussel on the outskirts of Needville. She is the genius behind the popsicles, although her herd of Nubian and Lamancha goats do a lot of the heavy lifting.

Roussel established her farm in 2007. While growing her own vegetables, her children received the gift of two baby Nubian goats. Thus, her herd was born. She began looking for ways to use the milk produced by her goats. She settled on ice cream because the milk produced by Nubian and Lamancha goats is very high in butterfat, which is perfect for creating rich, creamy dairy products. She went one step further and made her sweet treats more portable.

Each popsicle is made from simple ingredients: goat milk, real cane sugar and natural flavoring. The result? A creamy, flavorful treat free from preservatives, stabilizers and high fructose corn syrup.

But don’t mistake simplicity for lack of variety. All We Need Farm offers a whopping 40 different flavors of popsicles which are rotated seasonally, ranging from classic options like strawberry, chocolate, and vanilla to more adventurous choices like golden milk, avocado and UBE.

Golden milk is made with goat milk, cane sugar, coconut, ginger, black pepper, ashwagandha (a shrub grown in Asia and Africa), fermented turmeric root, and curcumin. It is said to have anti-inflammatory properties. UBE tastes like sweet milk, but the color is a beautiful deep purple.

These popsicles aren’t just a hit at local farmers markets (where they sell for $5 each)—they’ve also made their way into 31 retail locations across the Houston area. From mom-and-pop shops and health food stores to local restaurants, parks and even a chocolate shop, Stacey has found plenty of creative ways to bring her popsicles to the people.

And these treats aren’t just a favorite with goat-milk connoisseurs. All We Need Farm’s popsicles have won numerous awards, including top honors at the Houston Livestock Show and Rodeo’s Best Bites event, one of the largest gourmet food and wine festivals in the world. Stacey’s pops have also been recognized by the American Dairy Goat Association Products Competition, the Texas Works Awards, and Edible Houston’s Local Hero and Leading Ladies honors.

Luckily, you won’t have to travel far to enjoy them. Just pop into our Model Homes in Harvest Green anytime in June and July for an opportunity to sample these unique treats.
