Good Food for a Good Mood

We hosted a fantastic workshop — Meal Prep for Realtors — last month that brought out about 60 agents interested in eating good food and good-for-you food.

Couldn’t make it? We have some tips from presenters and health advocates John Cartee and Yuri Torres:

  • Try to get 40 to 50 percent of your calories from carbohydrates, 25 to 35 percent from proteins and 15 to 25 percent from fats.
  • Be a Meal Prep Master! Plan a week’s worth of meals and prepare food in bulk so it’s ready when you’re ready to eat. Having meals that are easy to get to the table will help you eat healthier and avoid making spontaneous decisions to eat out.
  • Must-have kitchen tools include a food scale, rice cooker and crockpot.
  • Don’t be tied to rigid diet rules — eat what you love but track your calories to make sure they fall within the correct percentages.

Each guest also received a cookbook with quick and easy recipes for busy Realtors. Below are two of our favorites:

Beef Enchiladas
6 low-carb tortillas
680g 96/4 lean ground beef
84g fat-free mozzarella cheese
84g fat-free cheddar cheese
1 can chopped green chilies
540g enchilada sauce
1/3 cup black beans 

Preheat oven to 350 degrees.

In a medium to large rectangular baking dish, spray with nonstick cooking spray and set aside.

In a medium/large frying pan, add ground beef and cook through. Then add green chilies and black beans. Turn off heat and let rest 1-2 minutes.

On a flat surface, lay out the six tortillas. Add the cooked beef and mozzarella cheese on top of each tortilla. Wrap the tortillas with the ends open and transfer to your prepared dish. Pour enchilada sauce over the enchiladas and top with cheddar cheese. Bake for 30 minutes or until bubbly.

Tuna Avocado Toast
2 slices Healthy Life bread (35 calories)
I can chunk light tuna
31g cream cheese (up to 60 calories)
1 avocado
5g Everything Bagel seasoning
Tomato slices (optional)

Toast two slices of bread.

In a mixing bowl, add remaining ingredients and combine. Spread tuna mixture evenly onto toast. Add tomato or drizzle with sriracha (or both!).
